Why do 100 g of flour and 100 g of sugar give different cups?

Because a cup of flour weighs 120 g and a cup of granulated sugar 198 g. That is why the chart lists each ingredient on its own row.

What does Th 6 mean on a French oven?

Thermostat 6 is 180 °C, which is 356 °F. Set a US oven to 350 °F.
