Why French recipes use grams
French home baking is written by weight, and kitchen scales are standard there. A cup of flour can weigh anywhere from about 110 to 150 g depending on whether you spoon it in or scoop it, so converting grams to cups always loses some accuracy. For cakes, macarons and pastry dough, weigh. For everyday cookies and quick breads, the cup amounts above work.
